Brienzo's Wood Fired Pizza started with a simple idea.  One day sitting in my grandmother's kitchen shortly after losing my job after 13 yrs I asked her, "Gramma, I don't want to work for anyone else anymore what should I do now? She simply responded, "why don't you make my grandmothers wood fired pizza?"  We proceeded to discuss recipe ideas, techniques, and less than a year later, Brienzo's Wood Fired Pizza was born.  We didn't have the financing in place for a brick n mortar restaurant so we decided to import an Italian made oven from Italy and had it mounted onto a custom trailer.  We spent the following two years taking Gramma Brienzo's pizza idea around Central IL and beyond and in the process cultivated a dedicated following.  April 2014 Brienzo's flagship store was opened.  Gramma Brienzo has passed, bless her soul, but her most amazing pizza recipes and ideas will live on for a very long time!  A special mention goes out to my family and  the most important person in my life, Jody Zimmerman, for without her this concept would never have succeeded.
